Appetizer Buffalo Meatballs

Ingredients

  • 2 pounds (900 g) ground Bison (Buffalo) Meat
  • 2 eggs slightly beaten
  • 1 cup (250 ml) shredded mozzarella cheese
  • 1/2 cup (125 ml) dry bread crumbs
  • 1/4 cup (60 ml) chopped onion
  • 2 tbsps (30 ml) grated Parmesan cheese
  • 1 tbsp (15 ml) ketchup
  • 2 tsps (10 ml) Worcestershire sauce
  • 1 tsp (5 ml) Italian seasoning
  • 1 tsp (5 ml) basil
  • 1/2 tsp (2 ml) pepper
  • 2 cups (500 ml) ketchup
  • 2 tbsps (30 ml) cornstarch
  • 12 ozes (370 ml) apple jelly
  • 12 ozes (370 ml) currant jelly

Instructions

In a bowl, combine above ingredients. Shape into 1-in (2.5 cm) meatballs. Place on a rack in a shallow roasting pan and bake at 350°F (180°C) for 10-15 minutes. Remove the meatballs and rack.

Combine ketchup and cornstarch in the roasting pan. Stir in jellies. Add the meatballs. Cover and bake 20-30 minutes. Yields about 8 dozen.
